Spotted Dick Pudding

200g self-raising flour

100g shredded suet (vegetarian or beef suet)

100g caster sugar

150g raisins or sultanas

1 tsp vanilla extract

150ml whole milk

Butter (for greasing)

Instructions​

Prepare the pudding mixture:

In a large bowl, mix the flour, suet, sugar, and raisins.

Stir in the vanilla extract.

Gradually add the milk, mixing until it forms a soft dough.Shape and wrap the pudding:

Lightly butter a sheet of greaseproof paper and a sheet of foil.
Shape the dough into a log and place it onto the greaseproof paper.

Wrap it tightly, then wrap it again in foil. Twist the ends to secure.
Steam the pudding:

Place the wrapped pudding in a steamer over boiling water.

Cover with a lid and steam for 1 hour 30 minutes to 2 hours, checking the water level occasionally and topping up if needed.
Serve:

Carefully unwrap the pudding and slice it into portions.

Serve hot with custard or cream.
