Spotted Dick Pudding

  • 200g self-raising flour

  • 100g shredded suet (vegetarian or beef suet)

  • 100g caster sugar

  • 150g raisins or sultanas

  • 1 tsp vanilla extract

  • 150ml whole milk

  • Butter (for greasing)

Instructions​

Prepare the pudding mixture:

  • In a large bowl, mix the flour, suet, sugar, and raisins.

  • Stir in the vanilla extract.

  • Gradually add the milk, mixing until it forms a soft dough.Shape and wrap the pudding:

  • Lightly butter a sheet of greaseproof paper and a sheet of foil.

Shape the dough into a log and place it onto the greaseproof paper.

  • Wrap it tightly, then wrap it again in foil. Twist the ends to secure.

Steam the pudding:

  • Place the wrapped pudding in a steamer over boiling water.

  • Cover with a lid and steam for 1 hour 30 minutes to 2 hours, checking the water level occasionally and topping up if needed.

Serve:

  • Carefully unwrap the pudding and slice it into portions.

  • Serve hot with custard or cream.
