Coconut Rice (Thengai Sadham)

Ingredients

Preparation time: 5 minutes (if rice is pre-cooked)

Cooking time: ​10 minutes

Serves 2​

  • 1 cup basmati rice (cooked and cooled)

  • ½ cup grated coconut (fresh or desiccated)

  • 1 tsp mustard seeds

  • 1 tsp urad dal (split black gram)

  • 2 dried red chilies

  • 1 sprig curry leaves

  • 1 tbsp cashews

  • 1 tbsp oil

  • Salt to taste

Instructions​

  1. Heat oil in a pan, add mustard seeds, urad dal, red chilies, and curry leaves.

  2. Add cashews and sauté until golden.

  3. Stir in grated coconut and cook for 2 minutes.

  4. Mix with cooked rice and add salt. Serve warm.
