Coconut Rice (Thengai Sadham)
Ingredients
Preparation time: 5 minutes (if rice is pre-cooked)
Cooking time: ​10 minutes

1 cup basmati rice (cooked and cooled)

½ cup grated coconut (fresh or desiccated)

1 tsp mustard seeds
-
1 tsp urad dal (split black gram)
-
2 dried red chilies
-
1 sprig curry leaves
-
1 tbsp cashews
-
1 tbsp oil
-
Salt to taste

Instructions​

Heat oil in a pan, add mustard seeds, urad dal, red chilies, and curry leaves.

Add cashews and sauté until golden.

Stir in grated coconut and cook for 2 minutes.

Mix with cooked rice and add salt. Serve warm.
