Stir-Fried Scallops with Broccoli

8 scallops

1-2 heads of broccoli

4 cloves of garlic

2 tsp salt

½ tsp sugar

1 tsp cooking wine

½ tsp ground black pepper

Instructions​

Prepare the Ingredients

Soak the broccoli in water with a pinch of salt for 15 minutes, then rinse and cut into small florets.

Finely chop the garlic.

Pat the scallops dry and season them with ½ tsp salt, cooking wine, and black pepper. Let them marinate for 15 minutes.

Blanch the Broccoli

Bring a pot of water to a boil, add 1 tsp salt, and blanch the broccoli until 80% cooked. Drain and set aside.

Sear the Scallops

Heat a pan with oil over medium heat, sear the scallops until golden brown on both sides, then remove and set aside.

Stir-Fry Everything Together

Add a little more oil to the pan, sauté the garlic until fragrant, then add the broccoli, ½ tsp salt, sugar, and a splash of water. Stir-fry briefly.

Finally, add the scallops back into the pan, toss everything together, and serve immediately.
