Egg Curry (South Indian)

Ingredients

Preparation time: 10 minutes (boiling and peeling eggs)

Cooking time: ​20 minutes

Serves 2-3​

  • 4 eggs (boiled and peeled)

  • 1 onion (finely chopped)

  • 2 tomatoes (pureed)

  • 1 tsp ginger-garlic paste

  • 1 tsp mustard seeds

  • 1 tsp turmeric powder

  • 1 tsp red chili powder

  • 1 tsp garam masala

  • ½ cup coconut milk

  • 1 sprig curry leaves

  • 1 tbsp oil

  • Salt to taste

Instructions​

  1. Heat oil in a pan, add mustard seeds and curry leaves.

  2. Add onions and sauté until golden.

  3. Add ginger-garlic paste, followed by tomato puree and spices. Cook for 5 minutes.

  4. Stir in coconut milk and salt. Simmer for 5 minutes.

  5. Add boiled eggs and cook for 5 more minutes.

  6. Serve with rice or dosa.
