Egg Curry (South Indian)
Ingredients
Preparation time: 10 minutes (boiling and peeling eggs)

4 eggs (boiled and peeled)

1 onion (finely chopped)
-
2 tomatoes (pureed)
-
1 tsp ginger-garlic paste
-
1 tsp mustard seeds
-
1 tsp turmeric powder
-
1 tsp red chili powder
-
1 tsp garam masala
-
½ cup coconut milk
-
1 sprig curry leaves
-
1 tbsp oil
-
Salt to taste

Instructions​

Heat oil in a pan, add mustard seeds and curry leaves.

Add onions and sauté until golden.

Add ginger-garlic paste, followed by tomato puree and spices. Cook for 5 minutes.

Stir in coconut milk and salt. Simmer for 5 minutes.

Add boiled eggs and cook for 5 more minutes.

Serve with rice or dosa.
